Description

Recipe Description: This hearty and flavorful Taco Soup combines the best of Mexican cuisine into a warm, comforting bowl. Packed with ground beef, beans, corn, and a blend of spices, it’s an easy one-pot meal that’s perfect for any night of the week.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound (450g) lean ground beef
  • 1 packet (1 oz/28g) taco seasoning mix
  • 1 can (15 oz/425g) black beans, drained and rinsed
  • 1 can (15 oz/425g) kidney beans, drained and rinsed
  • 1 can (15 oz/425g) corn kernels, drained
  • 1 can (14.5 oz/411g) diced tomatoes with green chilies
  • 4 cups (960ml) low-sodium beef broth
  • Salt and pepper, to taste

Instructions

  1. In a large pot over medium heat, heat the olive oil. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the ground beef to the pot and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
  4. Stir in the taco seasoning mix until the beef is well-coated.
  5. Add the black beans, kidney beans, corn, diced tomatoes with green chilies, and beef broth to the pot. Stir to combine.
  6. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes to allow the flavors to meld.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with your favorite toppings such as shredded cheese, sour cream, chopped cilantro, or tortilla chips.

Notes

  • For a spicier kick, consider adding a diced jalapeño pepper along with the onions.
  • This soup stores well and can be refrigerated for up to 3 days or frozen for up to 3 months. Reheat gently on the stovetop or in the microwave.
  • Feel free to customize with additional toppings like diced avocado, green onions, or a squeeze of lime juice for extra freshness.
