- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound (450g) lean ground beef
- 1 packet (1 oz/28g) taco seasoning mix
- 1 can (15 oz/425g) black beans, drained and rinsed
- 1 can (15 oz/425g) kidney beans, drained and rinsed
- 1 can (15 oz/425g) corn kernels, drained
- 1 can (14.5 oz/411g) diced tomatoes with green chilies
- 4 cups (960ml) low-sodium beef broth
- Salt and pepper, to taste
Instructions
- In a large pot over medium heat, heat the olive oil. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Add the ground beef to the pot and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
- Stir in the taco seasoning mix until the beef is well-coated.
- Add the black beans, kidney beans, corn, diced tomatoes with green chilies, and beef broth to the pot. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes to allow the flavors to meld.
- Season with salt and pepper to taste.
- Serve hot, garnished with your favorite toppings such as shredded cheese, sour cream, chopped cilantro, or tortilla chips.
