  • 1 cup Fritos corn chips, for topping
  • ½ cup sour cream, for topping
  • ½ cup shredded cheese (Mexican blend or cheddar), for topping
  • 2 tablespoons fresh cilantro, chopped, for garnish

Instructions

  1. In a large pot over medium heat, cook the ground beef until browned, breaking it into crumbles. Drain any excess fat.
  2. Add the diced onion to the pot and sauté until translucent, about 3 minutes.
  3. Stir in the minced garlic and cook until fragrant, approximately 1 minute.
  4. Sprinkle in the taco seasoning and chili powder (if using), stirring to coat the beef and onions evenly.
  5. Pour in the diced tomatoes (with their juices), black beans, and broth. Stir to combine.
  6. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20–30 minutes, allowing the flavors to meld.
  7. Season with salt and pepper to taste.
  8. Serve hot, topped with Fritos, a dollop of sour cream, shredded cheese, and a sprinkle of fresh cilantro.
