Description

A fresh, zesty, no-fuss dip loaded with beans, corn, colorful veggies, and bold flavor. Perfect with chips or straight from the spoon.


Ingredients

  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can black-eyed peas, drained and rinsed
  • 1 (15 oz) can sweet corn, drained (or 1½ cups thawed frozen corn)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • ½ red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup fresh cilantro, chopped
  • ½ cup zesty Italian dressing
  • Juice of 1 lime
  • Salt and pepper, to taste

Instructions

  1. Drain & rinse your beans and corn.
  2. Chop all your veggies.
  3. Throw it all in a big bowl — beans, corn, peppers, onions, tomatoes, cilantro.
  4. Pour in the dressing and lime juice, then stir gently.
  5. Season with salt and pepper to taste.
  6. Chill in the fridge for at least an hour (overnight is even better).
  7. Serve with your favorite chips or enjoy with a spoon.

Notes

This dip gets even better after chilling. Customize with avocado or jalapeño if you like extra creaminess or heat!
