Description
A fresh, zesty, no-fuss dip loaded with beans, corn, colorful veggies, and bold flavor. Perfect with chips or straight from the spoon.
Ingredients

- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can black-eyed peas, drained and rinsed
- 1 (15 oz) can sweet corn, drained (or 1½ cups thawed frozen corn)
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- ½ red onion, finely chopped
- 1 cup cherry tomatoes, halved
- ½ cup fresh cilantro, chopped
- ½ cup zesty Italian dressing
- Juice of 1 lime
- Salt and pepper, to taste
Instructions
- Drain & rinse your beans and corn.
- Chop all your veggies.
- Throw it all in a big bowl — beans, corn, peppers, onions, tomatoes, cilantro.
- Pour in the dressing and lime juice, then stir gently.
- Season with salt and pepper to taste.
- Chill in the fridge for at least an hour (overnight is even better).
- Serve with your favorite chips or enjoy with a spoon.
Notes
This dip gets even better after chilling. Customize with avocado or jalapeño if you like extra creaminess or heat!
