Leftover Rotisserie Chicken Penne Pasta Recipe

Description

This creamy one-pot chicken pasta is a quick, comforting dinner made with leftover rotisserie chicken, rich Parmesan, and sun-dried tomatoes. Ready in under 30 minutes!


Ingredients

  • 2 cups shredded leftover rotisserie chicken
  • 2 cups uncooked penne pasta (or rotini or rigatoni)
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • ½ teaspoon red pepper flakes (optional)
  • 1 teaspoon Italian seasoning
  • 1½ cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes, chopped (optional but so good)
  • Salt and pepper, to taste
  • Fresh basil or parsley for garnish

Instructions

  1. In a large, deep skillet or sauté pan, heat olive oil over medium heat. Add the minced garlic and red pepper flakes, and cook for about 1 minute, just until fragrant.
  2. Stir in the uncooked penne, chicken broth, and Italian seasoning. Bring it to a simmer, then cover and let cook for 10–12 minutes, stirring occasionally, until the pasta is just tender. If needed, add a splash more broth or water.
  3. Once the pasta is cooked, lower the heat and stir in the heavy cream and Parmesan. Let it simmer uncovered for a few minutes until the sauce thickens slightly.
  4. Stir in your shredded rotisserie chicken and sun-dried tomatoes. Cook for another 2–3 minutes until everything is warmed through and coated in that dreamy sauce.
  5. Taste and adjust with salt and pepper. Top with chopped fresh basil or parsley and extra cheese, if you’re feeling it.

Notes

You can swap penne with rotini or rigatoni. Don’t skip the sun-dried tomatoes — they add so much flavor!
