- 2 cups shredded leftover rotisserie chicken
- 8 oz pasta (penne, rigatoni, shells — anything goes)
- 2 tablespoons butter
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream (or half-and-half)
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- Optional: 1–2 handfuls baby spinach or frozen peas
- Garnish: fresh parsley, extra Parmesan
Instructions
- Bring a big pot of salted water to a boil. Cook your pasta until just al dente. Drain and set aside, reserving about ½ cup of the pasta water.
- In a large skillet, melt the butter over medium heat. Add chopped onion and cook until soft, about 3–4 minutes. Stir in the garlic and cook for another 30 seconds.
