  • 8 oz pasta (penne, rigatoni, shells — anything goes)
  • 2 tablespoons butter
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream (or half-and-half)
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • Optional: 1–2 handfuls baby spinach or frozen peas
  • Garnish: fresh parsley, extra Parmesan

Instructions

  1. Bring a big pot of salted water to a boil. Cook your pasta until just al dente. Drain and set aside, reserving about ½ cup of the pasta water.
  2. In a large skillet, melt the butter over medium heat. Add chopped onion and cook until soft, about 3–4 minutes. Stir in the garlic and cook for another 30 seconds.
