Perfect for family dinners or casual gatherings, this casserole is easy to make, versatile, and guaranteed to be a hit at your table.

Ingredients

Scale

For the Meatloaf Layer:

  • 1 lb ground beef (lean)
  • 1 onion, finely chopped
  • ½ cup bread crumbs
  • 1 tsp garlic powder
  • ½ cup barbecue sauce
  • 1 tbsp Worcestershire sauce
  • Salt and pepper, to taste

For the Potato Layer:

  • 3 cups mashed potatoes (homemade or store-bought)
  • 1 tbsp butter (for extra creaminess)
  • 2 tbsp sour cream (optional, for added richness)

Toppings:

  • 4 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 2 tbsp green onions, chopped (optional, for garnish)

Instructions

Step 1: Prepare the Meatloaf Layer

  1. Preheat the oven to 375°F (190°C). Grease a 9-inch square baking dish.
  2. In a large mixing bowl, combine ground beef, onion, bread crumbs, garlic powder, barbecue sauce, Worcestershire sauce, salt, and pepper. Mix until just combined.
  3. Press the meat mixture evenly into the prepared baking dish.
  4. Bake for 25 minutes or until the internal temperature of the meatloaf reaches 160°F (71°C).

Step 2: Prepare the Mashed Potatoes

  1. If making mashed potatoes from scratch, boil peeled and chopped potatoes in salted water until tender, about 15 minutes. Drain and mash with butter, sour cream, and a pinch of salt and pepper.
  2. If using pre-made mashed potatoes, warm them and mix in butter or sour cream for extra flavor.

Step 3: Assemble the Casserole

  1. Spread the mashed potatoes evenly over the cooked meatloaf layer.
  2. Sprinkle shredded cheddar cheese over the mashed potatoes.
  3. Top with crumbled bacon for a crispy finish.

Step 4: Bake and Garnish

  1. Return the casserole to the oven and bake for an additional 10–15 minutes, or until the cheese is melted and bubbly.
  2. Garnish with chopped green onions before serving.

Notes

  • For a smoky twist, use smoked bacon and smoked cheddar cheese.
  • Sweet potatoes can be used instead of regular mashed potatoes for a sweeter flavor profile.
  • Leftovers can be refrigerated in an airtight container for up to 3 days or frozen for up to 2 months.

Variations:

  • Southwestern Style: Add diced jalapeños and chili powder to the meat mixture for a spicy kick.
  • Vegetarian Option: Substitute ground beef with lentils or a plant-based alternative, and replace bacon with crispy fried onions.
  • Loaded Version: Stir shredded mozzarella into the mashed potatoes and sprinkle parmesan on top for extra cheesiness.
