  • 1 can (15 oz/425g) whole kernel corn, drained
  • 1 can (15 oz/425g) creamed corn
  • Vegetable oil, for frying

  1. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt.
  2. In a separate bowl, combine the milk and eggs, beating until well mixed.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Fold in the drained whole kernel corn and creamed corn until evenly distributed.
  5. Heat about 2 inches of vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
  6. Using a spoon or small ice cream scoop, carefully drop spoonfuls of batter into the hot oil, frying in batches to avoid overcrowding.
  7. Fry the nuggets for 2–3 minutes per side, or until golden brown and crispy.
  8. Use a slotted spoon to remove the nuggets and drain them on paper towels.
  9. Serve hot, accompanied by your favorite dipping sauces.
