Perfect for a light lunch, meal prep, or picnic, this easy-to-make chicken salad is a guaranteed crowd-pleaser. Serve it on croissants, in lettuce wraps, or enjoy it on its own!

Ingredients

Scale
  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works great)
  • 1 cup seedless grapes, halved
  • ½ cup pecans, toasted and roughly chopped
  • ½ cup mayonnaise (or Greek yogurt for a lighter version)
  • ¼ cup sour cream (optional, for extra creaminess)
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 tablespoon lemon juice (for freshness)
  • 1 tablespoon honey (optional, enhances the sweetness)
  • ½ cup celery, finely chopped (adds crunch)

  • 2 green onions, sliced thinly

Instructions

  • Prepare the Chicken – If using rotisserie chicken, remove the skin and shred or dice the meat. If using freshly cooked chicken, allow it to cool before cutting into bite-sized pieces.
  • Toast the Pecans – Heat a dry pan over medium heat, add pecans, and toast for 3-5 minutes, stirring frequently, until fragrant. Let them cool before chopping.
  • Make the Dressing – In a mixing bowl, whisk together mayonnaise, sour cream (if using), Dijon mustard, lemon juice, salt, black pepper, garlic powder, and honey. Stir well until smooth and creamy.
  • Assemble the Salad – In a large bowl, combine chicken, grapes, celery, green onions, and toasted pecans. Pour the dressing over and gently mix until everything is evenly coated.

  • Chill and Serve – Cover the bowl and refrigerate for at least 30 minutes to let the flavors meld together. Serve chilled on croissants, lettuce wraps, crackers, or as a standalone dish.
