A flavorful and tender chicken gizzard and heart dish simmered low and slow with aromatic herbs and spices—perfect comfort food with a twist.

- 1 lb chicken gizzards and hearts (cleaned and trimmed)
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bay leaf
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- Salt and pepper, to taste
- 2 cups chicken broth
- Fresh parsley to garnish
- Optional: Red pepper flakes (for heat)
- Optional: 1/2 cup white wine or a splash of apple cider vinegar
Instructions
- Rinse the chicken gizzards and hearts well. Trim any tough membranes or extra fat. Slice large gizzards in half.
- Heat olive oil in a heavy-bottomed pot or Dutch oven over medium heat.
- Add diced onion and cook until soft, about 5 minutes.
- Add garlic, paprika, and thyme; cook until fragrant.
- Add chicken gizzards and hearts. Brown slightly, stirring occasionally for 6–8 minutes.
- Add bay leaf and pour in chicken broth (plus wine or vinegar if using). Bring to a boil, then reduce heat to low.
- Cover and simmer for 1.5 to 2 hours, until the gizzards are fork-tender.
- Season with salt and pepper. Let the broth reduce slightly with the lid off if a thicker sauce is desired.
- Garnish with chopped parsley and serve hot.
Notes
Red pepper flakes add a nice heat. The longer the simmer, the more tender the gizzards become.
