Ingredients
Scale
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon ground cloves
- ½ teaspoon salt
- ½ cup unsalted butter, melted (or ½ cup vegetable oil)
- 1 cup brown sugar, packed
- 2 large eggs
- 1 ½ cups unsweetened applesauce
- 1 teaspoon vanilla extract
- ½ cup chopped walnuts or pecans (optional)
- ½ cup raisins (optional)
Instructions
- Preheat the Oven – Preheat your oven to 350°F (175°C) and grease a 9-inch square or round baking pan.
- Mix Dry Ingredients – In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
- Combine Wet Ingredients – In another bowl, whisk together the melted butter (or oil), brown sugar, eggs, applesauce, and vanilla extract until well combined.
- Incorporate Dry into Wet – Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
- Add Extras – If using, fold in the chopped nuts and raisins for added texture.
- Bake the Cake – Pour the batter into the prepared pan and smooth the top. Bake for 35–45 minutes or until a toothpick inserted in the center comes out clean.
- Cool & Serve – Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Serve plain, dusted with powdered sugar, or topped with cream cheese frosting.
Notes
- For a healthier version, use whole wheat flour instead of all-purpose flour.
- To make it dairy-free, substitute butter with coconut oil or a plant-based alternative.
- Reduce sugar by replacing part of it with honey or maple syrup.
- This cake pairs wonderfully with a cup of coffee or a scoop of vanilla ice cream.
- Store leftovers in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
